I have a 15x7 rims w/ 195 50 15 but can i have a wider tire on the rim?

My stock GN 15x7 wheels have a 255/60 on them.....so yes.

Possibly, but it normally means you have to increase tyre wall height too. Neither option is great for handling as the tyre wall effectively sits outside of the rim and pinches back in along the bead. It's normally only done on off-roaders. The current 'fashion' is to have a slightly skinnier tyre stretched to fit. Aesthetics, apparently.
EDIT: Sorry didn't think about American cars! I've only seen it on 4x4's over here in UK.

I think a 205 tire would be just right for a 7" wheel. But depending on how much power your car makes this may actually slow it down. Due to the fact that the motor now has to spin more rubber thus increasing drag.

Yeah, 225s will easily fit on 7" wide wheels. 235s probably wouldn't be a problem.
195 actually seems too narrow.

Im thinking 205 45 or wider the lower side wall will compensate for the size increase and the width will obviously increase my grip.

I live in a mountainous region with twists up the yin-yang so grip is valued WAY above acceleration.

You can comfortably go to 205's, and even 225's. But extra width doesn't neccessarily mean more traction. Got a pic of your wheels?

I run 14x7 inch wheels with 225/60/14s. 225 is about what you want, if you can find a matching sidewall profile to fit your car.

I really need too, I was working on it the other day and fixed a little cosmetic detail that has be broken the entire time ive owned it and it made me reflect on how far it has come. Really made me want to do a write up, just haven't started it yet.

Haha, tempting....wait not really :P I'll try and start writing it up, I have a lot of documentation of stuff I have done, so I could do a pretty comprehensive write up of my trials and tribulations of being a GN owner.
